YO! Sushi, the UK’s leading conveyor belt restaurant, opened our first store in London in 1997, and we now operate 54 restaurants in 5 countries. Based on the concept of a Japanese ‘Kaiten’ sushi bar, we offer a quality, fast and fun dining experience for all age groups. Due to our continuing success we’re expanding our operations and have a vacancy for a Head Chef at our restaurant in Edinburgh.

The Head Chef Job Role

As Head Chef, you will be responsible for all aspects of managing the Sous Chefs, Kitchen Team Leaders and Team Members and for running the kitchen.
In addition (but not limited to) the Head Chef will be responsible for establishing and maintaining high standards of operation in the areas of food quality, profitability, timeliness of food, cleanliness and maintenance, performance of the entire Kitchen Team and ensuring that they adhere to the company’s policies and procedures;
Preparation of various reports (relating to all aspects ofthe performance ofKitchen staff and the restaurant unit) to the General Manager on a weekly, quarterly, bi-annual and annual basis; and
To participate in the recruitment process of Kitchen staff.

The Head Chef Candidate

To apply for this demanding role you must be able to work in a fast-paced and multi-tasked environment and must have the following:-

Extensive experience as a Chef;
Proven leadership expertise and excellent problem solving skills;
A sound academic background and an understanding and application of mathematical principles as well as calculation and analysis;
Basic computer literacy;
Financial awareness (experience in managing food and labour costs)
Ability to produce recipes within brand specification;
First class verbal communication skills and the ability to deal effectively with members of staff and customers
A complete understanding and a passion for Asian cuisine.
