I'm an Italian Chef with 30 years experience covering all aspects and duties involved in running a kitchen and restaurant. I trained under Giovanni Palumbo (father) an established chef in Edinburgh. Currently I hold both Elementary and Intermediate food hygiene certificates. Recently in role as Head Chef of La Piazza, a busy central Edinburgh restaurant responsible for ingredient and produce sourcing, costing, ordering, stock control, staff training and menu creation. Also computer literate and hold City & Guilds level 1 and level 2 diplomas for IT also distinction for IT principles from Stevenson College. I especially enjoy working with fresh and locally sourced produce; I also take an interest in foods from all over the world and recreate these at home.
