Apparently it's mission impossible to find someone who fits this bill, maybe it's just the people I meet.

Someone around my age (25) give or take.
Someone who is intelligent and doesn't do the acting dumb routine. Geeky doesn't bother me either.
Someone who is opinionated and stubborn enough to stand up for what they think/want but will accept when they are wrong.
Someone who isn't so loud they make you wish for a volume control.
Someone with a few eccentricities or quirkiness
Someone that is honest, doesn't act like they are in high school while still in their 20s.
Someone that doesn't reply to something they don't like with a childish "whatever"
Someone that realises a person is not their job/family/car or so on so forth
Someone who enjoys spending time both outside and inside
